Yamakawa Mitsuo is an ambitious unit formed by four brewers in Yamagata Prefecture.
It was named after each letter of the brand name and breathed life into it.

This season's theme for Yamakawa Mitsuo is collaboration with "fermented foods."
The label is inspired by "pesora pickles," a specialty of Oishida Town in Yamagata Prefecture.
It is a sour and spicy pickle made by soaking eggplant in salt to bleach it white and then fermenting it with lactic acid. It is also called "Pechora Pickle" locally, and Mitsuo tilts his head as to whether it is Pesora or Pechora.
To support the fermented lactic acidity, we use Yamagata sake rice "Dewasansan" and the Yamahai method of preparation. It's a perfect match!
