Soy sauce fruit is a traditional fermented food from the Shonai region of Yamagata Prefecture that has been around since the Edo period. It is a versatile seasoning made by mixing soybeans, wheat (pressed barley), rice, and koji starter (soy sauce seed koji), adding salt water to it, letting it rest, and fermenting it while stirring.
Including Hanabusa Soy Sauce, there are only two companies that manufacture soy sauce in Yamagata Prefecture. The soy sauce berries of Hanabusa soy sauce are a very valuable seasoning that has inherited tradition.
