When the winery was established in 2018, we received support through crowdfunding and successfully bore fruit. At the Ueno (Wano) vineyard, we cultivate eight grape varieties—Berry A, Merlot, Bijou Noir, Pinot Noir, Syrah, Albariño, Chardonnay, and Mondebrillo—using a pesticide-free, trellised system. While cultivating wine grapes without pesticides (no chemical pesticides, Bordeaux mixture, or sulfur compounds) is quite challenging, we were able to harvest again in 2023. Although we cannot ferment each variety individually, we decided to cold-macerate and ferment all of them together, with the intention of "tasting the vineyard." We hoped to slowly, slowly express the "vineyard." After bottling, the balance between the red and white wines hadn't integrated, but finally, it has become a "soft" flavor that expresses the "vineyard." It's a spicy and subtly umami wine. The production quantity is still small, but we appreciate your support.
