When the winery opened in 2018, we received support through crowdfunding, which enabled the grapes to bear fruit without any problems. At the local Ueno field, we grow eight grape varieties, namely Berry A, Merlot, Bijou Noir, Pinot Noir, Syrah, Albarino, Chardonnay, and Mondebrier, in a hedgerow style without the use of pesticides.
Cultivating wine varieties without pesticides is quite tough, but we will finally be able to harvest them in 2022. Although we cannot brew each variety individually, we decided to ferment them all at low temperatures with the intention of "tasting the field". We want to slowly express the "field". After bottling, the balance between the red and white wines was not well fused, but we have finally achieved a "soft" taste that can express the "field". As a wine with a spicy and gentle umami taste. There are still only a few bottles, but we hope you will enjoy it.
