THE CLASSIC's second production base is Yamagata Prefecture, where WAKAZE was founded. THE CLASSIC was born through a collaboration of brewing recipes born in Paris, raw materials from Yamagata Prefecture, and traditional techniques of sake breweries that have been around for over 400 years since the Azuchi-Momoyama period.
In addition to the commitment to food, the French people, who do not lack consideration for the environment, have accepted it because of the unpolished rice and locally brewed sake that takes sustainability into account. The brewing method for making and delivering sake to the world is a brewing process inspired by the techniques of the Edo period, before rice polishing technology was developed. Only 10% of the rice is polished to minimize the waste of rice bran.
It is an easy-to-drink wine glass that mixes the complex and rich flavor of low-polished rice with the cute sourness unique to the low-alcohol finish.
