In the fall of 2019, I met Nadine, a renowned vintner in Beaune, Burgundy, who shared her knowledge of winemaking and barrel aging at Domaine Jacques Prieur. Our challenge was to reconcile the natural acidity of the sake with the complex fruity aromas of the Burgundy casks. The oak barrels produce a delicate and elegant aroma, reminiscent of cassis, vanilla, toast and roasted tea.
