Three people, Tomodachi (T), Edamatsu (E), and Furuuchi (F), commonly known as TEF, came together to protect a vineyard in the Motosawa district of Yamagata City from abandonment. They made Pink Della (which has developed color more advanced than Blue Della and has an interesting balance of sweetness and acidity) and fermented the fermented orange juice in the bottle for a second time.
I think the crisp acidity and the umami of orange make for an interesting taste. The Pink Della in particular was brewed for a full 60 days. When poured from the bottle into a glass, the fine carbon dioxide gas from the lactic acid fermentation is fragrant. It is not just a sour wine as "Blue Della", but we have explored the fun of a new growing category called "Pink Della".
