Made from Merlot grapes grown in the Okitama region of Yamagata Prefecture. To mitigate the intensity reminiscent of the hot summer of 2024, the destemmed and crushed grapes underwent a 60-day cold maceration. This is a carbonic maceration (MC) wine, where plunging was kept to a minimum, utilizing the cap to seal off air within the tank. This method imbues the wine with more body than typical sealed-container MC, while also creating more "aroma" and "softness" than standard maceration.
I wanted to express a smooth, easy-drinking wine using Yamagata Merlot, which is why I chose this production method. The wine minimizes "pyrazines (green notes)" and emphasizes a smooth, juicy, easy-drinking character, with a hint of sweetness, making it versatile for various occasions. It has also undergone full malolactic fermentation (MLF), so I believe you'll enjoy an even more complex, savory finish.
Though production is limited, please enjoy this "plain Merlot" – a nod to plain udon or soba.
