Five grapes from Yamagata Prefecture (Steuben, Merlot, Hokujun, Cabernet Sauvignon, Cabernet Franc) are completely destemmed. Skin fermentation in stainless steel tanks and amphorae for 6 to 15 days. 50% aged in amphorae, 40% in stainless steel tanks, 10% in 500L old barrels. Unfined, unfiltered, no antioxidants or other additives are used.

A variety of storage containers are used, including stainless steel tanks, wooden barrels, and amphorae, and the aroma is complex, combining fresh berry fruits, spices, fern-like herbs, and fragrant elements reminiscent of oolong tea.
The flavor is medium in volume, with the juiciness of raw varieties, the firm acidity of wild grape varieties, and the full body of European varieties. You can feel the variety of flavors in just one sip.
