Made with 100% grapes from Yamagata Prefecture.
Steuben, Delaware, and Merlot are brewed using various brewing methods and blended in the spring of 2023. The aging period is 8 to 9 months. 60% stainless steel tank aging, 40% amphora aging. All fermented spontaneously with wild yeast. No clarification, no filtration, no antioxidants or other additives.
The main flavor is red berry elements such as strawberries, while the aroma of oolong tea is added to the aftertaste. The taste is fresh, with sweet and sour fruits and a bitterness reminiscent of blue herbs. The tannins are soft and the wine has a smooth impression due to some amphora.
