A blend of Steuben from Yamagata Prefecture, which has been destemmed and fermented for 4 days with the skin, Steuben which has been fermented with the skin for 6 days, Steuben which has been blended with the skin for 5 days, and Niagara. Finally, a 12-day skinned Yama Sauvignon (12% whole bunch) was added. A wine that combines the gorgeous floral scent of Steuben with the wildness and high acidity of Yama Sauvignon.
