All grapes used are 100% grown in Nanyo City, Yamagata Prefecture. Steuben, Delaware, Niagara and Neo Muscat are brewed in various ways (6-day skin ferment, 7-day skin ferment, 14-day skin ferment) and blended in summer 2022. 15% whole bunch fermentation, maturation period about 10 months. 64% was aged in stainless steel tanks and 36% in amphora. Spontaneously fermented with wild yeasts. No clarification, no filtration, no other additives such as antioxidants.
A rosé wine with a fresh, juicy flavor reminiscent of red fruits like cherries, and a mellowness from amphora brewing.
