We used 100% grapes from Yamagata Prefecture. The Steuben is divided into two halves, one with the skin for 6 days after destemming and the other with skin contact for 12 hours. Niagara and Rosario Bianco are mixed and whole bunch fermented in amphora. Delaware had skin contact for 12 hours. Blended after fermentation using various varieties and brewing methods. After aging in stainless steel tanks, it is bottled.
