Delaware and Niagara from Yamagata Prefecture are pressed after 24 hours of skin contact. Water is added to the pomace that comes out of pressing, skin fermentation is carried out in a resin tank for 5 days, and then pressed again. Just before bottling, Delaware juice was added to adjust the sugar content to around 1.5 bar, and fermentation continued in the bottle. No antioxidant added.
It has a candy aroma typical of edible varieties, and is reminiscent of candied orange peel. The taste is very light and voluminous due to the manufacturing method. It captures the crisp acidity from the skin and seeds, making it refreshing and easy to swallow. It has plenty of carbonation, giving it a refreshing and enjoyable finish.
It goes well with fried foods that are juicy and oily, or with dishes that take advantage of the sweet and sour or citrus aroma of wine.
