Takahashi-kun lives in Ueno, Nanyo City, and works at the post office while farming on weekends in an effort to protect his late father's farm. This wine was made when the Delaware grapes he inherited from his father were just about to turn pink, just before they were fully ripe. He has long been fascinated by the acidity of blue Dela, and has been making wines with a range of acidity from the blue Dela grapes in Okitama, Yamagata, exploring the category of "blue Dela". However, he noticed that the wines that turn pink, rather than blue, have just the right amount of acidity and fruitiness, which is interesting, so he began exploring "pink Dela" in addition to "blue Dela".
I would like to focus on the "Japonese" that will be born from this Pink Della category. This wine is slowly fermented with lactic acid for four months after the white liquor is brewed, and has a taste that combines lactic acid flavor with a pleasant acidity and umami. People with an acid fetish may say that it is a little tame, but please enjoy the deliciousness of the grapes, which were harvested at the perfect time when they were pink.
