I have been fascinated by the acidity of Aodera for some time, and have been exploring the category of ``Aodera'' by making wines with various acidity ranges at Aodera in Yamagata Okitama, but the timing of the coloring being pink instead of blue is just right. I realized that it was interesting because it has a sour taste and a fruity taste, so I stopped searching for "Blue Dera" and changed my search to "Pink Dera".
I would like to take a look at the "Japonese" that is born from this pink dela category. This wine is produced through slow lactic acid fermentation over a period of 4 months after preparing the white liquor, which combines the lactic acid flavor with a pleasant acidity and umami flavor. Those with an acid fetish may be told to be quiet, but please enjoy the deliciousness of the pink color, which is harvested at the perfect time.
