A wine that goes hand in hand with everyday life. An ``Asian-taste'' wine made from Japanese grapes that can be used in any occasion. We took time to prepare the wine to create a pleasant lingering aftertaste, starting with the soft grape aroma at the top and a moderate umami.
Cold maceration, which involves natural fermentation at low temperatures for over 60 days, promotes the extraction of umami from the skin and just the right amount of tannin, resulting in a flavor that is both ``fragrant'' and ``umami.'' After fermentation, the wine is stored in a sulfite-free tank, and natural lactic acid fermentation in the tank prevents oxidation and changes the mellowness of the flavor.
After that, it is bottled, and MLF occurs again inside the bottle, so when you open the bottle, it will be a little fluffy (MLF may cause floating matter to form on the upper liquid level, but it is harmless to the human body). Although this wine is in the category of red wine, we are basically aiming for a wine that can be enjoyed chilled. This wine is easy to pair with a wide variety of dishes, so both first-time drinkers and regular drinkers will find it a ``SOIF'' (thirst quencher) wine that can be enjoyed.
