The 2023 vintage is made primarily from Berry A and a stiff Merlot, expressing the wine's concept of "everyday life."
A wine that accompanies your daily life. A wine with an "Asian taste" made from Japanese grapes that can be used in any situation. We took our time to brew it in order to create a pleasant aftertaste with a soft grape aroma at the top and a moderate "umami" flavor.
By macerating the wine naturally at low temperatures for over 60 days, the wine is able to extract the flavor and moderate tannins from the skins, resulting in a flavor that is both fragrant and delicious. The sake is stored in tanks without added sulfites, and natural lactic acid fermentation in the tank prevents oxidation and also gives the sake a mellower flavor.
After bottling, MLF is occurring again in the bottle, so it will be a little bubbly when opened (MLF may cause floating particles on the upper surface of the liquid, but this is harmless to humans). Although it is a red wine, the basic aim is to make it a wine that can be enjoyed chilled. It is a wine that goes well with a variety of dishes, so it will be enjoyed by both first-timers and frequent drinkers as a "SOIF" wine.
