Made from 100% Yamagata-grown grapes. All grapes were destemmed and fermented in various vessels, including amphorae, stainless steel tanks, and resin tanks. Once alcoholic fermentation was complete, the wine was immediately bottled. Novello means "new wine" in Italian.
It has a bright, light color, and the aroma is a mix of fresh red berries, root vegetables, and green herbs. The taste is as fresh as the name suggests, with the sweet and sour notes of wild strawberries and nuances of root vegetables like beets. In terms of depth, it has a well-balanced finish with the sweetness of table grapes and the acidity of wild grape varieties, resulting in a refreshing crispness.
