Made with 100% grapes from Yamagata Prefecture. All grapes are destemmed and fermented in amphora, stainless steel tanks, resin tanks, and various fermentation vessels. After confirming that the alcoholic fermentation has finished, bottle it immediately.
No clarification, no filtration, no added antioxidants. Novello means new wine in Italian.
The aroma has a candy aroma derived from edible varieties, and while the main elements are red berries such as strawberries, the lingering scent is reminiscent of oolong tea, and the taste is fresh, with the sweet and sour fruit reminiscent of blue herbs. You can also feel the bitterness. The tannins are soft and the wine has a smooth impression due to the influence of some amphora. The color is light, but the finish has a ``light flavor'' that allows you to feel the flavor expand towards the lingering finish.
