Made with 100% Yamagata grapes harvested on October 7, 2022. The Steuben and Merlot were harvested at the same time, all destemmed and mixed 50% each in amphora and stainless steel tanks for 14 days after skinferment and pressing. After that, it is aged in stainless steel tanks for a month, and bottled after confirming that the alcoholic fermentation is over.
No clarification, no filtration, no other additives such as antioxidants.
The scent is based on fresh American cherries and has an impression of adding a blue scent like the undergrowth of the forest. The taste is sweet and sour and botanical blueness derived from raw materials, and the tannins are soft and fresh to drink.
