Made with 100% Muscat Bailey A grapes from Yamagata Prefecture. 25% of the Muscat Bailey A grapes are left as whole clusters and placed at the bottom of the tank. The remaining 75% are destemmed and placed on top of the whole clusters, creating a semi-carbonic maceration at the bottom. It is then macerated with the skins for 9 days and pressed. The wine is racked once before bottling and bottled in the summer of 2024, after approximately 9 months of aging in stainless steel tanks.
The color is a brilliant ruby, and the aroma offers fresh red berry notes with the sweet candy-like scent characteristic of the varietal. The flavor is primarily fresh berry, similar to the aroma, but with complex undertones of green herbs and spice due to the whole cluster maceration. The tannins are soft, and the finish is dry.
