Made with Merlot and Cabernet Franc from Yamagata Prefecture. Merlot is skin fermented in a resin tank for 8 days and aged in an amphora. Cabernet Franc is skin contacted for 24 hours and fermented in an amphora. Both are fully destemmed. Blended in June 2023 and bottled that summer. Aged in amphora for about 9 months. All fermented spontaneously with wild yeast. Unfined, unfiltered, and no antioxidants or other additives are used .
The aroma is a mix of red shiso and fern-like herbs with red currants. The taste is similar to the aroma, with red berries combined with blue herbs and a hint of white pepper. The tannins are well-balanced and smooth.
