This Delaware grape is the first to be harvested from Ceros's fields. In July 2025, there was an extreme lack of rain, resulting in small berries and clusters. We harvested them when the balance of acidity and sweetness was just right. We pressed them as whole clusters, without destemming. Since the sugar content was sufficient, we fermented them without added sugar, creating a dry wine.
It has citrus notes reminiscent of mandarin oranges and herbal nuances like lemongrass. Its distinctive features are the acidity that spreads in the mouth and the umami in the finish. It pairs well with a wide range of dishes, such as cream cheese, olives, tempura served with salt, and Japanese cuisine with dashi broth. Enjoy it chilled first, and then experience how the flavor changes as the temperature rises.
