The vineyard, which he took over in the absence of a successor, has been cultivated this season using only organic pesticides, without the use of insecticides or herbicides. The brewing is done in two batches. The green Della grapes from early August are mostly small ovaries and are fermented after whole bunch pressing. The Della grapes from late August, when they have progressed in color, are fermented with the skins before being pressed and then both are blended. No sugar is added, and the grapes are fermented with the natural sweetness of the fruit, resulting in a dry finish. The sharp acidity of the green Della grapes is combined with the complex flavor of the fermentation, giving it a unique flavor.
