Macabeo is fermented in stainless steel tanks for 10 days after skin contact. Parellada is fermented using skin contact for three days, then pressed into old French oak barrels to finish fermentation. Blended before bottling. No additives, no SO2 added, wild yeast, no filtration, hand-picked, organically grown.
The taste is fresh and has the same sweet and sour yellow citrus aroma. The aftertaste is very fresh and the flavor of the grapes is soft and spreads on your tongue.
