After harvesting fully ripe Delawares, they are kept in a cool, dark place for at least a day to get rid of the fever, and then the juice is squeezed using a balloon press.
Fermented for 50 days in stainless steel tanks in a low-temperature brewing room.
No antioxidants or filtration.
