This wine is made from 100% Delaware grapes, grown by us without pesticides (including Bordeaux mixture and sulfur compounds) in the Kanayama vineyard in Nanyo City, which is known for its thick-skinned Delaware grapes. The grapes were grown with vinyl coverings in the spring, allowing ample Nanyo City breezes to circulate. The crushed grapes were sealed in plastic and underwent 90 days of carbonic maceration (MC) without any intervention, allowing for natural fermentation. After pressing and the completion of primary fermentation, secondary fermentation occurred in the bottle. This "lightly sparkling wine" offers a substantial drinking experience with an alcohol content of 11%, complemented by a zesty, citrusy bitterness that pops with effervescence. We believe the 2025 vintage will offer a lingering aftertaste of bitter fruit. Even if the effervescence subsides, it can still be enjoyed as a still wine. We hope you enjoy this sensation, both now when it's freshly made and after it has aged. The "HipHop" series is characterized by a natural "bottom-up" sensation, much like "HipHop" music.
