In 2017, a new project was launched in the wine-producing region of Akayu. This wine is based on the concept of "Bottling the Vineyard - bottling wine straight from the vineyard."
The heartbeat of the earth, the heartbeat of the grape growers, the heartbeat of the winemakers, the heartbeat of those who introduce this wine, the heartbeat of those who drink this wine - I believe that each of these heartbeats shapes the wine-producing region.
This Koshu grape, from the only Koshu vineyard in Akayu, Yamagata (Nanyo City), was destemmed and crushed before being pressed with skin contact for 48 hours. It was then aged in two three-year-old French oak barrels (sulfur-burned for preservation) and two four-year-old French oak barrels (sulfur-burned for preservation), without lees removal. The remaining juice was then fermented naturally at low temperatures in stainless steel tanks. The overall balance of barrels and stainless steel was 4:1. No bâtonnage (mixing) was performed during or after oak fermentation, allowing for the carbonation to remain. This ensures the delicate, fine acidity characteristic of the 2024 Akayu Koshu is not compromised. The soft texture and acidity characteristic of French oak fermentation make it a perfect match for a variety of food occasions. While it can be aged for five or ten years, it is also enjoyable fresh. This is the only Yellow Magic Winery wine to explicitly list antioxidants, and no sulfites are used except for the sulfur-burned oak.
