Made with Cabernet Sauvignon and Cabernet Franc from Yamagata Prefecture. All grapes were destemmed, skin-fermented in plastic tanks for 6-19 days, then pressed. The wine was aged for 7 months in old 500L barrels, then for an additional 2 months in stainless steel tanks before bottling. Fermented with wild yeast, unfined, unfiltered, and no other additives were used.
The aroma is based on berry fruits reminiscent of cassis, with herbal notes like red shiso, and a slight savory nuance of tree bark and black tea. The flavor features red and dark berries, like compote, with a complex and balanced combination of fern-like herbs, the savory taste of black tea, and tannins. Although it's a young wine, the acidity and astringency are softened, resulting in a mellow and pleasant drinking experience.
