All grapes are from Yamagata Prefecture. Cabernet Sauvignon and Cabernet Franc are destemmed and skin fermented (24 hours to 20 days) in resin tanks and amphorae. Aged in amphorae and small barrels.
All are spontaneously fermented with wild yeasts, unclarified, unfiltered, and contain no antioxidants or other additives.
The aroma is a mixture of dark red berry nuances, green herbs and root vegetables. The taste is sweet and sour like cassis tea, with a subtle astringency. The use of amphora and wooden barrels in combination brings together the fruit flavor and smoky nuances.
