Cabernet Sauvignon 2021 [GRP2023.7]
Aroma is ripe dark cherry and clove-like spice. The palate is generally dry with a hint of grape acidity. Finely integrated bitter tannins spread through the aftertaste.
All grapes used are from Kaminoyama City, Yamagata Prefecture. All Cabernet Sauvignon is destemmed fiber, divided into two containers, tank and amphora, and skinfermented for 20 days. For about 9 months after pressing, those fermented in fiber tanks are aged in stainless steel tanks, and those fermented in amphora are aged directly in amphora. Blended and bottled 2 tanks of wine in the summer of 2022. All spontaneously fermented with wild yeasts.
No clarification, no filtration, no other additives such as antioxidants.
