Cabernet Franc 2021 [GRP2023.4]
All grapes are grown in Yamagata prefecture. All destemmed Cabernet Franc from Takahata Town, Yamagata Prefecture, skinfermented in amphora for 8 days. Only a gentle punch down with minimal extraction during fermentation. After pressing, it is aged in stainless steel tanks for about 10 months. A small amount of Cabernet Sauvignon was blended and bottled in the summer of 2022.
The scent is a complex impression with the addition of fresh blackberry and tea-like aromas. The taste is sweet and sour and botanical blueness derived from raw materials, and the finish is dry and accompanied by soft tannins.
* Punch down (Pigeage) Pushing down the fruit cap (fruit skin, pulp, seeds, etc. pushed up from the top) to agitate. There is a method of stepping in by foot and a method of pushing in with a tool called a paddle.
