Made with Delaware and Niagara from Yamagata Prefecture. A blend of Niagara and Delaware that has been subjected to 12-hour skin contact, with a focus on Delaware that has been destemmed and subjected to 24-hour skin contact. Fermented and aged in stainless steel tanks. The aging period is approximately 7 months. Fermented with wild yeast, unfined, unfiltered, and without added antioxidants.
The taste is based on the fresh, sweet and sour taste of table grapes, with a freshness reminiscent of Japanese pears. On the back palate, you can feel the saltiness along with soft tannins and a blue lingering finish, which tightens the whole wine in a well-balanced manner.
