Uses 95% Muscat Bailey A from Yamanashi Prefecture and 5% Cabernet Sauvignon from Yamagata Prefecture. 20% of the whole bunch of Muscat Bailey A is laid on the bottom of the tank, and the remaining 80% is destemmed and placed on top of the whole bunch to create a state of se-maceration carbonic* at the bottom. The skins are then brewed and pressed for 10 days. Blended and bottled with a small amount of Cabernet Sauvignon in the summer of 2022. Aged in stainless steel tanks for about 10 months.
The scent is juicy and fruity, like a combination of freshly cut apples and strawberries. The taste is full of fruit, with a pleasant acidity and soft astringency. The aftertaste has a yeasty umami aftertaste.
*Maceration Carbonic: A brewing method in which the grapes are placed in a tank with carbon dioxide and fermented without crushing them. It features a fresh scent and a deep color with little astringency.
