The raw material is 100% Muscat Bailey A from Yamanashi Prefecture. 20% of the whole bunch is laid on the bottom of the tank, and 80% is destemmed and placed on top to create a semi-maceration carbonic (carbon dioxide immersion method). Skinned and pressed for 8 days. It was aged in stainless steel tanks for about 9 months while being pumped over several times a day.
Cute fruit and sourness spreads. The aftertaste is dry and gentle, with just the right amount of astringency and acidity.
