Made from 100% Delaware grown in the Kanayama area of ​​Nanyo City without spraying pesticides (no Bordeaux or sulfur mixtures). This is a Delaware tree that was grown in the spring by being covered with vinyl to allow the wind from Nanyo City to pass through. In order to bring out the characteristics of Delaware's thick skin, the fruit is crushed under foot in a tank without being crushed, and then paddled by hand once every two days for 50 days to prevent the flavor from becoming too strong. Made with semi-maceration carbonic (SemiMC).
Like the "modulation" in "Acid Techno," the "Ashid" series has an exquisite balance between intact and crushed grapes, created by the way the maker steps the grapes.
In particular, the Delaware fruit that is the raw material for this wine has very thick skins, and we felt the characteristic plum and plum aromas within the skins and expressed these nuances as they were in the taste of the wine. The color is quite plum-colored, and the bitterness from the stems tightens the flavor. You can enjoy it now, but I think it would also be delicious if you let it age and wither.
