Made with 100% Delaware grapes from Yamagata Prefecture. 15% whole bunch fermentation. Skin fermentation for 6-14 days in amphorae or resin tanks, then aged for 8-9 months (75% amphorae, 25% resin tanks). No clarification, no filtration, no antioxidants, etc.
The aroma combines tangerine peel, herbs like verbena, and the characteristic candy aroma of table grapes.The taste is fresh, with the sweetness of ripe Delaware grapes nicely balanced by the tannins from maceration.
