The grapes are carefully selected and pressed by hand, with a focus on Shuyo, an original Yamagata variety, as well as Orin and Shinano Sweet. Just before the end of alcoholic fermentation, the reserved juice is added back in to adjust the sugar content. Fermentation continues in the bottle. This cider has a mild acidity and is light to drink. No antioxidants are added.

The aroma is fresh and refreshing, like the aroma of freshly cut apples. The taste is fresh and juicy, with a refreshing feeling reminiscent of blue herbs and a unique salty aftertaste. The light taste and pleasant carbonation make this a cider that goes well with food.
