Uses grapes from Yamagata Prefecture and Yamanashi Prefecture. Blended in summer 2022 after all the different grapes are destemmed and fermented in amphora with different vinification methods. Bottled after 8 months of amphora aging.
All spontaneously fermented with wild yeasts. No clarification, no filtration, no other additives such as antioxidants.
The aroma is the sweetness of table grapes, juicy and fresh sourness, and the mellow astringency and dry taste derived from the amphora aging.
