The raw materials are Steuben from Yamagata Prefecture and Yamasauvignon from Iwate Prefecture. Steuben is destemmed and skinfermented* in amphora for 12-14 days. After pressing, it was put back into the amphora and aged for 6 months before being blended with Yama Sauvignon in Spring 2021.
A red wine that combines the juiciness of Steuben and the firm acidity of mountain grapes, with a compact aftertaste and a pleasant drinking experience.
*Skinferment: fermented with the pericarp.
