Rosario Bianco, Niagara, and Delaware from Nanyo City, Yamagata Prefecture are brewed using three amphorae. 50% whole-cluster fermentation (skin fermentation for 7-13 days) is performed, and all are aged in amphorae. Blended in May 2023. Aging period 8-9 months. All are spontaneously fermented with wild yeast. Unfined, unfiltered, and no other additives such as antioxidants are used .
The aroma is a combination of papaya-like fruitiness and the freshness of green tea. The taste also has the same tropical fruit nuances as the aroma, with citrus acidity and soft tannins. It has a fresh, cloudy aftertaste.
