100% grapes from Yamagata Prefecture are used. Brewed in 3 amphoras and blended in Summer 2022. The first is direct pressing and fermentation of Delaware and Chardonnay. The second is Niagara and Rosario Bianco pressed and fermented after 24 hours of skin contact, and the third is Niagara and Neo Muscat with whole bunch fermentation for 7 days. Bottled after about 8 months of amphora maturation.
All spontaneously fermented with wild yeasts. No clarification, no filtration, no other additives such as antioxidants.
The refreshing scent of muscat grapes is refreshing, and the taste has a fruity finish with flavors of green apples and young pears, and you can feel the sweet and sourness of the mellow fruit from the amphora aging.
