It uses four grapes grown in Nanyo City, Yamagata Prefecture: Delaware, Neo Muscat, Niagara, and Rosario Bianco.
All grapes are destemmed, fermented in amphora for 10 days, and aged in amphora for about 8 months. No clarification, no filtration, no antioxidants or other additives are used.
The aroma is aromatic, reminiscent of ripe orange and jasmine. The taste is just as fresh as the aroma. The acidity is mild, and the bitter aftertaste from the maceration is mild and smooth.
The rich flavor that comes from maceration goes well with chewy, juicy ingredients and aromatic dishes with spices that complement the aromatic impression of the wine.
