Made from Yamagata Prefecture's "Hokujun Amrensis and Muscat Hamburg hybrid", crushed and brewed for 60 days.
The paddle is added once every two days to promote the growth of lactic acid bacteria in the upper part of the brewing process, which reduces the acidity of the malic acid peculiar to amlensis (wild grapes) and converts it into lactic acid. Brewed at a low temperature and with less paddles, the wine has a rich color and an alcohol content of 9%, making it a light rustic wine. "Alternative" = "things that don't change, inevitability without other options, etc."
The vivid purple also shows the aging potential of this wine. I still enjoy it and I enjoy it even when I go to bed. Please enjoy while feeling the "Alternative" of enjoying wine.
