Despite a prolonged drought this year, the Hokujun grapes ripened vigorously. We carefully cultivated the Hokujun with minimal pesticides. Even when the grapes were hit by rain before harvest and late-season rot began to spread, we persevered, waiting "just a little longer, just a little longer" for them to fully ripen before harvesting. After chilling and destemming overnight, the grapes were lightly crushed, and only the first press was luxuriously prepared for the new wine.
Being a mountain grape variety, Hokujun, I had imagined a "sour-delicious rosé" with a sharp acidity. However, the unexpected result was a semi-sweet wine with a subtle lingering sweetness. The fresh and soft fruit flavor is pleasant, and it should be enjoyable for those who "dislike the acidity in wine" or those who prefer sweet and umami-rich sake.
It comes with a crown cap but is not a sparkling type. It is sold as a still wine as only a faint gassiness remains. It’s very drinkable, making you reach for another glass.
Hokujun is a rare variety, cultivated almost exclusively in Kaminoyama City. This may be the first and last opportunity to enjoy this Hokujun as a "sweet new wine." For Christmas, New Year's holidays, home parties, and family gatherings, we hope that not only wine lovers but also those who think "wine seems difficult" or "I don't really understand it" will enjoy this taste.
The label uses last year's Pinot Rosé "KOMORI UTA." We adopted it again this year because the wine's charming taste perfectly matched the world of the label.
