2025 was a challenging year for grapes. There was almost no rain, and we were forced to water the wine grapes, which should normally not need it. In particular, the early-harvested Delaware grapes seem to honestly carry the memory of that parched season.
When poured into a glass, it has a pale orange hue. It's a natural expression, reflecting the juice pressed directly. The harvest began immediately in September.
The lack of rain and low yield created concentration, resulting in a slightly higher alcohol content of 12%. That's why this wine isn't just a "light first glass"; it's a sparkling wine that accompanies the temperature and aroma of each dish from the beginning to the end of a meal, quietly asserting its presence.
The gas pressure is approximately 4 atmospheres. Rather than assertively bubbling immediately after uncorking, the bubbles gradually rise over time.
