We use Merlot from Kaminoyama City, Yamagata Prefecture (Kubote and Miyawaki areas), and after initial cold fermentation, we slowly raise the temperature and ferment for about 30 days to thoroughly extract the flavor. After that, we age it in barrels for 13 months to create a mellow, deep flavor.
This is a deep, dry red wine that features a concentrated fruitiness that combines aromas of blackberries and plums with spices, herbs, and a hint of toast, as well as fine tannins and a rich acidity.

After fermentation to bring out the potential of the grapes, we wait for the sediment to settle naturally and then bottle the top layer unfiltered to produce a dry wine.
Because it is unfiltered, it may be cloudy or contain sediment (floating particles, etc.), but since these are ingredients derived from grapes, it is safe to consume.
