The Collection Vin Petillant is a series of lightly sparkling wines that allow you to fully appreciate the natural flavor of grapes. The ancestral method is used, where the wine is bottled during fermentation and fermentation continues in the bottle, trapping the bubbles created by the yeast. This results in cloudiness and sediment, offering a variety of flavors derived from the grapes. As the wine can easily overflow, please chill it thoroughly, then open it slowly over a sink or bowl while carefully releasing the gas. Also, due to being unfiltered, there may be cloudiness and sediment (such as suspended matter), but these are grape-derived components and are safe to consume.
*Due to in-bottle fermentation, grape components (such as pigment) may float to the surface, leaving a residue on the liquid surface.
This is a white pet-nat made from seeded Delaware grapes produced in Yamagata Prefecture (Kubote district, Kaminoyama City, and the neighboring Honsawa district, Yamagata City) and fermented in the bottle. It is a dry pet-nat with a harmonious balance of elegant aromas, such as apple and La France pear, and crisp acidity. In 2022, growth was earlier than usual, so we harvested early to retain acidity, resulting in a wine with beautiful acidity again this year.
We recommend first enjoying the clear supernatant, then gradually mixing in the sediment as you continue to drink. The flavor will change depending on how much sediment is mixed in.

*No sugar or acid was added, and a small amount of antioxidant was used during preparation (destemming and crushing).
*From 2022, the bottles have been changed. They are now slightly shorter, narrower, and lighter than before.
