Yonezawa is a castle town with a 150,000 koku domain, founded by Uesugi Kenshin, a hero of the Sengoku period. We named this sake "Nihonhibiki" and incorporated Kenshin's military flag, the konji hinomaru (red sun on a dark blue background). This Junmai Ginjo sake is made from carefully selected sake rice polished to a high degree, and brewed through long-term low-temperature fermentation during the coldest period of winter. It is a well-balanced sake with an elegant, rich aroma and a soft mouthfeel.
