It's that time of year again. The "Yamakawa Mitsuo" project, brought to you by four dedicated breweries from Yamagata Prefecture.
The first installment's Mitsuo seems to be diligently engaged in research. In fact, Mitsuo is challenging the "aesthetics of not polishing" by learning the essence of sake brewing, determined not to be defeated by the soaring price of rice. Please enjoy the powerful umami unique to low-polished rice!

A great cold snap has arrived, and the cold days continue, but I hope you are doing well. Yamagata's roads are as smooth as Mitsuo's skin.
As you know, the price of raw rice has skyrocketed this year, making things very difficult. This season's Mitsuo has decided to once again pursue the goal of using every precious grain of rice without waste.
So, this year's first release is an introduction to sake with a rice polishing ratio of 90%. It was pressed recently, and the result reaffirms the potential of low-polished rice. Please enjoy Mitsuo's hidden? masterpiece with confidence.
